In this episode Chef Nick takes you on a journey of Popular Southern American Breakfast and serves you Biscuits/ Scones along with mouth watering Bacon Gravy that you simply can't resist!

Biscuits/ Scones :
Ingredients
Flour : 2 cups / 280 gms
butter: 7 tbsp (cold)/ 105 gms
salt: 1tbsp / 15 gms
baking soda: 1/2 tsp / 3gms
baking powder: 2 tsp / 30 gms
buttermilk: 3/4 cup / 250 ml

Method:
To the flour add butter, salt, baking soda and baking powder, mix it till it resembles sand or breadcrumbs. Make a well in the centre of the mixture and add buttermilk to it and incorporate it well. When the whole thing comes together roughly, knead the dough well on a floured surface. Roll it out lengthwise and fold it in, repeat the process as shown in the video thrice. Make small spheres of the dough and bake the biscuits for 15 -18 mins at 220 degrees in a pre heated oven.

Bacon Gravy:

Ingridients:
Bacon fat : 40 gms / 1/3 cup
Butter: 210 gms / 14 tbsp
flour: 250gms / 1 3/4 cup
milk: 1ltr milk (cold)/ 4/5 cups
salt: to taste
black pepper: to taste
nutmeg: to your descretion

Method:
Add bacon fat and butter to a suacepan on medium flame and let it melt. Add same quantity of flour to the melted mixture, after they are completely incorporated, add cold milk to the hot roux (the mixture), keep on mixing it continuously so that no lumps are formed. Then add salt, black pepper and nutmeg and mix it again. When the gravy is thick, its done.
